Spicy Linguini with lemon

To be honest, this recipe is a variation of light and diet of a rich and very tasty dish that I have often been offered by a dear friend , a cook and a wonderful woman – alas – that never puts on weight.
I like it so much that I was able to produce a version for the diet , light and tasty that even my daughter , a fork of picky , says preferable to the first because it lighter.
It can also be prepared as a cold pasta , but I prefer the hot version that enhances the scents used in the preparation .

Among other things, it is really simple to prepare, and the effect of presentation is wonderful : even in my photo homemade .
To prepare the spicy linguine with lemon choose regular pasta : the integral tends to weigh down the flavor of the sauce , which is made of perfumes.

Linguine with lemon Ingredients for 1 person:

  •     70 grams of linguine
  •     2 tablespoons fresh goat cheese
  •     an untreated lemon
  •     3 dried hot peppers
  •     1 sprig of mint
  •     salt and extra virgin olive oil

While the linguine cooks , prepare the sauce dissolving the goat cheese with finely chopped chillies and finely chopped mint.
Cut into slivers lemon zest untreated .
Keep out from water the pasta, keeping aside a ladle of the cooking water , and saison it  with the goat cheese with mint and chilli, adding slivers of lemon peel if the sauce is too hard add a little of the cooking water .
Serve and garnish with a few mint leaves and a thin slice of lemon.
