Linguine with salmon and spinach

Ingredients for 2 people

  • 150 grams of linguine
  • 100 grams of fresh salmon
  • 150 grams of fresh spinach
  • 50 grams of smoked salmon
  • 50 grams of cottage cheese
  • pink pepper
  • Full sea salt

Chop the spinach leaves and make them jump quickly with a drizzle of olive oil and a clove of garlic.

Clean the salmon fresh from bones , spines and skin , cut into small pieces and let it cook in a pan with a little oil , salt, pepper and a little white wine.

When the salmon is cooked keep aside some cubes of pulp and whisk together the remaining smoked salmon and cottage cheese : if the cream is too thick add a few tablespoons of the cooking water of linguine .

Cook the linguine al dente, and blows up the dough in the pan quickly over high heat , with the cream of salmon , salmon and spinach : serve with a light dusting of pink pepper.
